Turkey Brine

Get a juicy turkey – guaranteed!



12 -14 lbs turkey, washed and cleaned out

1 cup kosher salt or 1 cup sea salt

1/4 cup table sugar or 1/4 cup brown sugar

5 garlic cloves minced

2 tbsp black pepper

2 quarts water

2 gallon turkey sized roasting bags




  1. Combine 2 quarts of water in a 6 quart pot with salt, sugar, garlic, and pepper, over high heat until dissolved.
  2. Remove from heat and let liquid return back to room temperature. MIXTURE SHOULD NOT BE HOT!
  3. Place one turkey bag into the other. Place a roasting pan at the bottom of the bags.
  4. Place the turkey breast side down, and pour in cooled liquid mixture.
  5. Seal tightly and refrigerate for 12-18 hours.
  6. Prepare your favorite turkey recipe, cooking the turkey to an internal temperature of 160 degrees.  Make sure to let the turkey rest at least 20 minutes before carving.
