Lechon Kawali (Crispy Fried Pork)

A Filipino mainstay that combines the rich flavor of pork cut with the acidity of a Miring dipping sauce!

Serves 2-3



1 ½ lbs pork belly (cut into chunks)

3-4 cloves garlic (crushed or minced)

3 dry bay leaves (laurel leaves)

1 tbsp salt

1 tbsp pepper

4 cups water

Oil for deep frying (vegetable or canola)

For Dipping Sauce –

3 tbsp low sodium soy sauce

2 tbsp mirin

2 tbsp white vinegar

2 garlic cloves (crushed or minced)

1 shallot (minced)

1 tsp crushed red pepper



  1. In a pressure cooker, add salt, pepper, bay leaves, garlic, water, and pork.  Close and wait for pressure indicator to rock.  Once rocking cook for 20 minutes.
  2. Turn off heat.  Release pressure naturally or carefully remove pressure indicator.
  3. Pour out pork to colander and drain thoroughly.  In a large bowl, place paper towel and place pork to dry for at least an hour.
  4. Using a deep fryer or large pot, heat oil to 400 degrees.  Carefully drop dried pork into oil and fry until golden brown and skin is crispy.  (Warning: Invest in a splatter guard and do not leave the pork unattended)
  5. For sauce, just mix all ingredients together.
  6. Serve immediately with Jasmine rice.
