Thai Peanut Stir Fry

A 15 minute meal with delicious results!

Servings 4


1 pkg rice stick noodles

2 medium carrots (julienned)

½ cup Mr. Yoshida’s Gourmet Sauce (or favorite Teriyaki Sauce)

4 tbsp crunchy peanut butter (smooth will do but will have less texture)

Cilantro (to top and garnish)

1 tbsp vegetable oil

1 tsp crushed red pepper

Salt and pepper (to taste)


  1. In large pot, fill with water (enough to cover noodles) and bring to boil.  Do NOT salt water, and add noodles.  Cook to al dente’ (approximately 10 minutes).  Drain thoroughly.
  2. In microwave safe container, mix sauce and peanut butter thoroughly until blended.
  3. In large wok or sauté pan, pour vegetable oil and heat till lightly smoking (on high). 
  4. Add crushed red pepper and carrots.  Stir fry for about 1 minute.
  5. Add noodles and stir fry for another 1-2 minutes.
  6. Take sauce mixture and microwave for 1 minute. (keep an eye on it)
  7. Mix sauce well, plate noodles and top dish with sauce and cilantro.

Options: Add shrimp or other protein.  Add more crushed red pepper for more kick.  Add bean sprouts or other crunchy vegetables.

    That sounds fantastic. I love good food, but hate to spend much time on it. Recipes like this make me happy–gourmet in under 20 minutes.
