Cajun Chicken Pasta (Slow Cooker Style)

Cajun Chicken Pasta (Slow Cooker Style)
An easy slow cooker recipe with Cajun flare!

Servings 4-6

1 lb bowtie (farfalle) pasta or other choice pasta
2 large chicken breast (cut into small cubes)
1 pkg cream cheese
1 roasted red bell pepper (cut into strips)
1 small can fire roasted tomatoes (diced)
1 cup 2% milk
2 cups chicken broth

½ cup Parmesan cheese
5 teaspoons Cajun seasoning
4 tbsp unsalted butter
Salt (to taste)

1. Season chicken with Cajun seasoning and salt.
2. In smoking hot pan, pour 1 tablespoon olive oil and brown chicken for 2 minutes. (Do NOT cook thoroughly)
3. Place browned chicken in crock pot and add all remaining ingredients, except for butter.
4. Cook on high for 3-4 hours or low 6-8 hours.
5. Twenty minutes before serving, add butter. Melt and mix thoroughly. Leave uncovered to thicken sauce.
6. Boil desired pasta in salted water to al dente or desired doneness.
7. Drain pasta well and cover with sauce. Toss well, grate fresh parmesan, garnish with chopped chives or parsley, and serve immediately.

Options: If in a time crunch, skip the browning step. Use low fat cream cheese, 1% milk, or omit butter to cut calories. Use Rotel diced tomatoes in habaneros for extra spice! Serve with toasty garlic bread.
