Ultimate Meatloaf

The toughest food critics out there: KIDS!  Food-It Forward was on a mission: Find a recipe that was kid friendly, yet complex enough to satisfy adult palates! Looks like the kids were happy!  Here it is!

Ultimate Meatloaf
A moist meatloaf with a tangy kick!

1 ½ lbs lean ground beef (90% or higher)
1 egg
½ cup Italian Bread crumbs
1 small onion (grated or finely chopped)
½ cup milk
Salt and Pepper (to taste)
½ cup ketchup
4 tbsp apple cider vinegar
4 tbsp brown sugar

1. Mix all main ingredients together (not sauce ingredients).
2. Spray loaf pan with non-stick spray and preheat oven to 350 degrees.
3. To make sauce, first dissolve brown sugar in vinegar by whisking. Once brown sugar is dissolved, add ketchup. Continue to whisk until full mixed.
4. Top uncooked meatloaf with sauce. Spread evenly and allow excess sauce to coat sides.
5. Place in preheated oven and bake for 1hr and 15min. Let rest for 10 minutes once complete. Slice and serve.

Options: Make additional amount of sauce for use on the side! Use ground turkey instead of beef!
