Cheesy Potato Casserole

 

Some foods just feed the soul!  This is one of them!  This is not for the waist conscious, but like we always say, “Everything in moderation!”

Cheesy Potato Casserole

The ultimate comfort food!

 Serves 6-8

Ingredients:

2 lbs frozen hash browns

2 cups sharp cheddar cheese

16 oz sour cream

10.5 oz cream of chicken soup

½ cup chopped onion

1 tbsp chopped chives

2 slices prosciutto

½ cup melted butter (unsalted)

Salt and pepper (to taste)

Directions:

1.  Mix all main ingredients together (minus prosciutto and chives and reserve ½ cup cheese)

2.  Spray 11×14 pan with non-stick spray and preheat oven to 350 degrees.

3.  Place mixture in pan and spread out evenly.

4.  Bake casserole for 45 minutes or until cheese is bubbling and has golden color.

5.  While casserole is baking, dice prosciutto into bit sized pieces.  Brown in olive oil until crisp, remove from heat, strain oil and set aside.

5.  After 45 minutes, take out casserole.  Top with ½ cup reserved cheddar cheese.

6.  Place back in oven until cheese is melted (approximately 5 min.).

7.  Remove from oven, top with chopped chives and crisp prosciutto.  Serve hot!

Options: Add green chilies for a little kick!  Also, render down bacon and add to mixture for a breakfast dish!
