Creamy Spaghetti with Shrimp and Prosciutto

 

Shrimp and Prosciutto Spaghetti

A richly flavored pasta dish!

 

Servings 4-6

 

Ingredients:

1lb pasta (spaghetti, linguini, or similar cut)

1lb shrimp (peeled and deveined)

4oz. prosciutto

¾ lb asparagus

1 bunch parsley

1 bunch chives

2 lemons (zest only)

1 ½ cup heavy cream

3-4 cloves garlic

2 tbsp extra virgin olive oil

3 tbsp butter (unsalted)

Salt and pepper (to taste)

 

Directions:

 

1.  Heat large pot of water to boiling.  Add generous amount of salt to boiling water and drop pasta.  Cook to al dente.

2.  Drain pasta, set aside.

3.  Cut asparagus on diagonal.  In a separate pan, add enough water to submerge asparagus.  Bring up to a boil, add salt.  Once boiling, add asparagus and blanch for 2 minutes.  Drain and immediately put in icebath.

4.  Take prosciutto and add 1tbsp olive oil, render down until crisp.  Remove prosciutto.

5.  In same sauté pan over a medium heat, add the garlic in olive oil. Add in the raw shrimp and cook for 4-5 minutes.

6.  Next add in the cream, drained asparagus, lemon zest and pasta.  Continue to cook for a further 3-4 minutes to allow the flavors to infuse. Finish with butter in batches until you reach a creamy rich consistency.

7.  Season with salt, pepper and garnish with the herbs, prosciutto, and sliced lemon.

 

Options: Substitute shrimp with chicken, or prosciutto with turkey bacon or regular non-sweetened bacon.

  2. I’m gonna try this now, chicken instead of shrimp, might try w/o the heavy cream cuz idk if mi madre will get down w/it cuz she’s a diet freak.. let ya know how it comes out!! thanks for the awesome idea!
