“Easter” Fusilli Pasta Salad


Easter Fusilli Pasta Salad

This Easter we wanted some of that traditional Easter meal – you know HAM!  But we didn’t want to do all the work, so I made this instead!  🙂 Get a little ham action for Easter (or any time) without all the work!

Servings 8-10


1 package cubed cured ham

1 lb whole square sharp cheddar cheese

1 package cherry tomatoes

2 1lb box of fusilli multicolored pasta

1 large chicken breast or 3 chicken tenderloins

1 cup mayonaise

1 tbs onion powder

½ tsp garlic powder

Salt and Pepper (to taste)


  1. Boil pasta to package directions.  Make sure to salt boiling water.
  2. In separate sauté pan, season chicken breast with salt and pepper and garlic powder and cook thoroughly on medium high heat (approximately 6 minutes per side). Let rest.
  3. Halve the cherry tomatoes and remove seeds.
  4. Dice the sharp cheddar cheese into cube sized pieces (approximately ½ inch).
  5. After chicken has rested dice into cubes.
  6. Add all ingredients into a large mixing bowl, sprinkle onion powder. 
  7. Add mayonnaise and mix well.
  8. Place in fridge and let chill at least 2 hours. Serve chilled.

Other ingredient options: Spinach, Avocado, Celery.
